What I ate… Week 2 Menu

The second week of menu planning and I’m on the late shifts so there are a lot of dishes that simply need to be bunged into one pot (or tray) or left in the slow cooker.

Monday

Leftovers: Roast Gammon, Eggs, Chips and Peas.
Lemon Cheesecake.

Tuesday

Spanish Chicken Traybake: Chicken Thigh Fillets, Chorizo, Red Onion, New Potatoes
and assorted vegetables.
Lemon Drizzle Cake.

Wednesday

Leftovers: Spanish Chicken Traybake.
Lemon Drizzle Cake.

Thursday

Pork Stir Fry: Pork Shoulder strips, Pak Choi, Baby Corn, Egg Noodles, Ginger and Garlic.

Friday

Grilled Salmon: With New Potatoes, Green Beans and Carrots.

Saturday

Paella: King Prawns, Diced Chicken and Chorizo.

Sunday

Lamb: Slow cooked Lamb Shanks with Mashed Potato, Broccoli, Peas.
